101 in 1001: 30 day Goals

ImageThis picture is a glimpse into our weekend. Friday night was dinner out in celebration of my 101 in 1001 progress. I have spent the last thirty days avoiding eating out for dinner. 30 days is a large amount of days to think of different, creative, and sometimes quick dinners. 30 days has given me insight into why and how often we eat out as a family. Usually eating out for us is due to being too busy, eating with friends, or because we are “bored” of the usual meal list. I am proud of us, though, because we made it thirty days of no eating out and on top of that, thirty days of not buying anything for myself. It is amazing the clarity that came from telling myself No, or leaning on Conner for support to stay with the goal. I will tell you, if it weren’t for Conner’s cheering and reminder, this goal would not have been reached. There were a few times where I would be too tired to think of a meal, too busy to cook, or just wanted to do something different. Luckily Conner swooped in to help and provide structure to keep us on track. Thanks sweetie 🙂 Here are a few links to some of the meals we made during our 30 day eat-in.
