101 in 1001 Update: What’s cookin’ good lookin’?

It is the 9th day of January 2013 and the only dinner we have eaten is at our  home, our our table. This is a victory for us! Truth be told, only one lunch was actually consumed outside of the home due to our State of our Union meeting. I am so proud of that. Since we have been cooking at home all week, we have been trying new recipes in an effort to make progress on my 101 in 1001 project. Here are the latest tested and tasted recipes.

1. Parmesan Shrimp:A little Parmesan, lime juice, yellow bell pepper, rice, and garlic bread was an excellent combination. It was super easy to make too. Hooray for easy recipes! Oh, yeah, we skipped the anchovies. Yuck. photo 4shrimp2. Pepper stuffed chicken breasts: This was another easier recipe and incorporated some ingredients that we normally wouldn’t eat- Peppers. 13. Four cheese baked rigatoni skillet. YUM!!! This also passed the reheat test wonderfully. What recipes have you tried recently that you think are easy enough that I could try them too? Four more recipes needed before I complete this goal!
