Recipe 1:: Paprika Chicken with Sour Cream Gravy and Stuffing

I am not good at cooking. I burn water…that is how bad I am.  For this very reason, I placed a goal on my 101 in 1001 list to try new recipes. When it comes to cooking, I especially do not like recipes that require a plethora of ingredients. I need it to be easy, few steps, and minimal ingredients. When I cook, it is few and far between, so I need recipes that do not require a trip mid-cooking to the grocery store.  My best friends are chicken and canned soup, so I was lucky to find the Campbell’s Soup Recipe Book that has easy instructions and includes my favorite food staples.

Originally, I tried cooking the Chicken and Stuffing Casserole. The meal was good, however the soup turned the stuffing into a soggy mess. The next night, I used the gravy recipe from this dish, since I had tried it and liked it before. I didn’t add the gravy the second time until after the dish was served on the plate. This resulted in a less soggy stuffing option. 

Either way, I was genuinely surprised at how easy and delicious this recipe was, even for me, the non-cooker. I did have to re-cook the chicken the first time as it was still a little pink, but at least there was no food poising! I would say I will try this recipe again, as it took my cooking confidence from a 0% to 1%.
